Mexico Chiapas Chimhucum Semi-Washed 2023

TIP: You can save products to your favorites list if you log in This coffee comes from smallholder farmers located in the town of Chimhucum high in the Los Altos mountains of Chiapas. Chimhucum, meaning “Two Rivers” in the local Tzotzil language, as a micro-climate is characterized by a wet and cold climate for much of the year.
Growers here in Chimhucum take great care to respect the land. Coffee is shade-grown and
sustainable practices such as composting and water treatment are employed. Comprising varietals
Caturra, Catuai and Sarchimor, farmers are growing at an average of 1750 meters. The farmers here pay equal attention to processing. In this lot, Sarchimor, Caturra, and Catuai varietals were hand-depulped and processed using the semi-washed or "miel" method.
During this process the producers fermented the coffees for between 6 – 12 hours resulting
in exceptional fruit sweetness and medium-bright acidity. We get candied orange peel, chocolate
in the aroma and the body is silky and buttery.
