Colombia continues to dazzle in the coffee world. Normally we might call this exceptional offering a "community coffee" as the cherries come from smallholder producers sprinkled between the
Caldas department municipalities of Chinchina, Villamaria and Manizales. The community wet mill guarantees a fixed price for cherries, making for a truly sustainable model.
The "alchemical wizard" Juan Felipe Aristizabal works his magic in the processing next, subjecting the cleaned and density-selected cherries to a maceration in a sealed tank. After 24 hours "fermenting in their own juices" to start the nuanced flavor development, the cherries are moved to raised, indoor African beds with solar dryers and turned 4-6 times daily to ensure even and proper drying.
This is an especially fruit-forward and dense coffee with tropical flavors and depth rivaling our East African naturals from Ethiopia and Uganda. Pourovers have a range of strawberry to wild blueberry, plantain, caramel and citrus. Light roast!

"...this morning I arose early to grind, press, and sample the El Salvadoran Women's Brew. Wow, what an aromatic and delicious treat! I first noticed a lack of offensive acidity (which is why I did not drink coffee for years), a delicacy and round impression on the palate, wonderful fruitiness, and complex flavors. This coffee reminded me of feminine-style red wines, with understated elegance, finesse, and polish. Some coffees are more about the flavor of roasting, almost a charcoal taste, but this was much more subtle and appealing to me. Tomorrow I will try the Ethiopian selection and let you know what I think. You are definitely on to something special with your coffees. "
